Has anyone used closed captioning software with Adobe Connect?  Anyone use Adobe

We have used the captioning extension as well as created our own (one of our caption vendors doesn't support the Adobe captioning pod). The Adobe captioning extension works with Caption Colorado, I haven't tried it with anyone else. It's pretty good; we haven't had any complaints, just a few requests directed at per-user customization (e.g. ability to change font size).

Captions are not editable after the fact, and captions are usually (only) 90-95% accurate. So, no post-production.

For 508-compliance, a transcript is a "last resort", barely acceptable, but certainly better than nothing.

I haven't played with this yet, but I would think once you can download the FLV, you would be able to (transcode if needed and then) synch it up with e.g. a SMIL file.
