Changing Domain name NON-Hosted Enterprise

We need to change the domain name on our Enterprise Connect Pro 7 server from Localhost to a FQDN assigned to our server.

How do I go about changing the domain name in Connect/

Sounds like the Admin Console is what you are looking for.  Login/RDP to the server(s) hosting your Connect install, then go to Start-Programs-Connect-Console and walk through the wizard.
