Backup solutions for recordings, published files, etc..
What are people using/what options exist for backing up user data?
We've got the DB covered, but how about the rest of the user data?

I've seen customers user everything from BackupExec to BackupPC (open source). Run it during off-peak hours, and make sure to actually test a restore ;)

Exactly what is being backed up? The entire Breeze directory?
This is really the part we are confused about -- which folders to backup so that the restore will work.

Yes, backing up everything is the most direct way to do it. You could exclude the log files, unless you have a need for access-log retention, etc...
